Vanilla Donuts and More

so, i think i have to try these again sometime.

for one, my greek yogurt was a little out dated (it didn't smell weird, so it's still okay, right?) and two- i think i have to find the vanilla bean paste they were talking about on the page i got this from. it may make all the difference with these.

still...who can say no to a fluffy vanilla glazed donut? especially when it's.....*gasp*....somewhat good for you?! insanity, i know. but check out the recipe here (the skinny fork) to get all the details. i even made a nice cup of rooibos vanilla chai tea to go along with them, it really made the cinnamon pop, even though there was only 1/4 teaspoon in them. at least i thought so.

i also, for the first time ever, used my coconut oil that i bought. i was a little surprised with the consistency of it, because it looked like it was gonna be hard and i would have to scrape it out of the jar with a knife, but it scooped pretty easily. i am excited to try making other things with it. i found these white chocolate coconut oil cookies....i am thinking of getting some key limes....add the zest and a bit of juice....key lime white chocolate cookies?! yes please! i am only just getting started with summer mode.


i also got a chance to make some granola bars a couple days ago. i super love granola bars, and these are plenty decent for you, too! AND they're no bake. no bake peanut butter granola bars! i made them before work, start to finish, they were done in 20 minutes, and that is partially because i slapped them in the freezer to chill faster rather than the fridge. (they're stored in the fridge now though, otherwise i'm sure i couldn't eat them right away.) favorite thing to throw in a lunch box, aside from peanut butter and fluff sandwich.

i know, i know. all of this healthy stuff and none of the good stuff i wanted to make that i ranted about last time. it is coming though. remember that whole "trying to be good" thing? i gotta switch it up a little now and then. i am in this phase now, and in a few days i will revert to wanting anything and everything bad for me, so all of those other things will happen. that's just how it goes.

but come on. just look at these donuts again! they're donuts. like, for really real. just by looking at them you can't even tell that there's anything good about them at all until you read the ingredients list. or because i told you they were. still....DONUTS.

i really do love breakfast. if i could eat it all day long every day, i totally would. you can make so many variations of things for breakfast, and all of it brings me back to happy. especially pancakes and waffles. most. favorite. ever.

like these oatmeal waffles that kind of taste like an oatmeal cookie....that i load syrup on top of anyway and it's still delicious. or these snickerdoodle pancakes? cookies? okay, well those aren't the most universal breakfast foods to demonstrate my point, but they're delicious (or look delicious...i haven't tried the snickerdoodle ones yet. or these key lime pancakes that are a must very soon). people eat steak and eggs for breakfast. a monte cristo? it's just a ham and turkey sandwich on FRENCH TOAST. don't even get me started with bacon. i think at this point, bacon and turkey are the two things that stop me from being vegetarian because i love them so much. that, and i only like a handful of vegetables, and probably would go crazy eating the same six foods over and over.

anyway.....enough about breakfast. talking about it is just making me hungry all over again. i need to get up and do something....else. (i already got up early and made donuts...then sat down with the internet.) thanks for reading! check back soon! ♥
