Samoa Truffles ♥ ...and Veggie Burritos?!

i said it would happen. although, i am still trying to be good about food. i think i have to refine these to make them better for me, because oh my goodness they are like samoas.


yeeeeaaah buuuuuddy. i could easily adapt these into tagalong or thin mint truffles, which was, as i was typing this, a spur of the moment genius thought, and i may do that in the next couple of days. i only did a small portion of the recipe so i only had 11 of these truffles overall. it is a perfect treat. especially for a rainy weekend.

and yes, for the record, i really do still have samoa cookies for real. i buy a bunch and freeze them, so it will be july or something and i can still be found hoarding them away, although they are getting somewhat expensive. i mean, $4 a box? BACK IN MY DAY, IT WAS ONLY $2.25, AND YOU GOT A FEW MORE THAN 10 COOKIES PER BOX.


it is nice to have a treat, but now that i have this recipe and the wonders of the internet, i can totally make my own. AND they won't have all the preservatives and stuff in them. (well, i guess the cookies i used have some, but there would be less if i made the cookies on my own. you get my point.) i am definitely going to try thin mint and tagalong variations since i DIDNT GET ANY THIS YEAR. yeah. we ordered a whole bunch of cookies, and the lady "read our phone number wrong," and then sold half of our cookies, and then wouldn't replace them. GRR. it's okay though. i have the internet. as if i don't say that enough.

on a brighter, somewhat healthier note....check out my burritos! they are roasted veggie burritos. i have a bunch of them stashed in my freezer for lunches to grab and go. i will probably make more of them. of course, i didn't include any beans, and only used like a tablespoon of onion rather than the whole thing (i will chop them up teeny tiny next time before hand, rather than attempt to after).


 so i have cauliflower, broccoli, carrots, brown rice, chicken, and a smear of onions. oh, and cheese. no burrito is complete without cheese in my book. super yummy. i think i found a new favorite lunch. at least something else to switch up with my current favorites: peanut butter and fluff, and turkey and whatever cheese i have on hand. i know i said i could eat breakfast all day long, but these i could probably eat all the time and never get sick of them, too.


♪♫oh, i've got a lov-e-ly bunch of burr-it-os...(dee-dle-dee-dee)...here they are all rolled up in a rooow♫♪ yep. too much time on my hands if i'm making up songs about burritos. but that's how i roll. (ba-dum-tssss).

i am kind of having fun looking for all of these good things for me. since i am so picky about what foods i like to begin with, it's almost like a challenge to combine both things. i don't know. i guess i am looking for something to fill this space. but, yum! go make these burritos! or maybe the truffles!!


completely random note....i am going to get fired. i was so bad and bought some hair dye on the internet. blue, purple and lilac. i'm not sure what i wanna do yet, but i know in about 3 weeks it will be purple, maybe a green streak, for the wedding. i have to match. i just know i have had too many people ask me what happened to me, and say that plain hair isn't for me. people i barely know, customers. that is some kind of sign. sooo it's happening. i say "fired," but it most likely will not happen. we will see what happens monday.
