Vacation Days Are Here! Tomato Pie

FINALLY!

oh i am so happy. i dont have to deal with anything for the next seven days. ron, steve and i left saturday night around 9:30pm, and drove almost 700 miles to finally arrive in the outer banks. we stopped a whole bunch, to give the car a break and to stretch and stuff, so it took a bit longer than the 10-1/2 hours that mapquest called for, but regardless. i am here. far, far away from any stress or worries.

at least that is the intention.

SO.

considering i did not post anything last week, i have a few things i made throughout the week, so i can use them and talk about that while i am here! starting with.....tomato pie!


i got this recipe from circusberry via pinterest. it includes a recipe for both the dough and the sauce, and yes, i definitely made both! you cant do one and not the other. plus, the sauce makes enough for two pies, so i can make it again!

the whole recipe overall took me a couple hours to complete. the only thing i was disappointed with, was the fact that my oven burned my crust a little, so i guess i just cant bake as long as the actual recipe calls for.


it made my apartment smell delicious. i will tell you what. it also made a super awesome lunch for the next 4 days after i made it!

if you are from central new york, seriously. you should be eating this. cold or room temp. not so much warm, because it is not typical pizza. the sauce has this sweetness to it, the crust is really soft and puffy. i kind of cant wait to make it when i get home and have more lunches for the next week.


ohh yeah. look at that pie. you see that? thats MY tomato pie.

so yeah. after our extended drive to outer banks, we are all taking a day to relax at the moment. we grabbed some pizza from pizzazz pizza last night, and this morning we hit up food lion to grab some groceries for the week. while we were waiting for the house yesterday, we wandered about for a bit. i got some sunglasses, we stopped at a k-mart, and played some mini golf.



it was such a long drive, which, like i said, could have been shorter, but between ron and i, he drove most of the overnight, and i had just worked two doubles and then opened the store early saturday morning (8-5:15 on saturday), so i was exhausted. it is hard to sleep in the car, so when it was my turn to drive, i had to make a couple extra stops so i did not fall asleep. passed out at 10 last night, which is the earliest ive gone to bed in a while, then woke up at about 8 something this morning. yeah, even on vacation i am up early. why waste the day?

i suppose that is why people think vacations make you more tired, trying to do as much as you can in a short time, but i feel like it is a good kind of tired. it is still less stress than dealing with anything at home.

anyway, i am going to leave it at that. i would like to try and hit up the beach, since that is the main reason for going on vacation.
